Q: I have a hard time eating enough fruits and vegetables, what do I do?

A: This is a very common problem. One way that we like to teach people to increase their intake is to have a fruit with each meal and a vegetable at lunch and supper. This provides 5 servings daily which is a great suggestion. Try new ways of cooking your vegetables, like sauté them in extra virgin olive oil or throw vegetable kabobs on the grill. By keeping them interesting you will be more interested in adding them into your diet.
